★ ★ ★ ★ ★ A splendid little “palenque” in San Pablo Etla producing excellent mezcal across many varieties of agave! They organize a monthly “Lunada” on the evening of the full moon, to launch the baking of a new batch of “piñas,” extensive sampling of their mezcals, and a 5-course dinner prepared by less-well-known local chefs! Call for reservations.
