El camino que trajo a Rodrigo Estrada a la avenida más concurrida de la Ciudad de México tiene curvas.

Una historia que relata con honestidad y orgullo en la mirada. Como joven adulto y con un diploma en administración de empresas turísticas bajo el brazo, dio sus primeros pasos a cargo de la recepción y banquetes en el Hotel & Garden Restaurant Las Mañanitas, un Relais & Châteaux en Cuernavaca. Más adelante, lo recibieron las aguas cristalinas de la Riviera Maya en un hotel de cadena alemana y, 3 años después, le ofrecieron la coordinación de ventas en una empresa ajena al turismo que no pudo ni debía rechazar. Gracias a ello recorrería su patria de punta a punta, probando a deleite las cocinas de cada región.

En el 2002 lo contrataron como gerente en Colibri un bistro de cocina mexicana en San Francisco posteriormente en el 2005 viene Fresca, un restaurante peruano. El reto le pareció interesante y la comida extraordinaria. Halló en sus platillos similitudes con la mexicana y a la vez combinaciones desconocidas, fruto de la fusión cultural que ocurrió en el Perú a lo largo de su historia. Habiendo adquirido experiencia en la preparación del cebiche, el estandarte de la gastronomía peruana por excelencia, comenzó a dibujarse en su mente un nuevo objetivo: trabajar en La Mar, de Gastón Acurio, como gerente general. En un día llegaban a servir hasta 800 personas, un desafío que emprendió con gran humildad y respeto. Para cuando decide finalmente volver a casa, lo hace con un bagaje de sabores y experiencias que definirían con precisión su actual y más preciado proyecto.

Como mexicano nunca se hubiera atrevido a poner un restaurante de comida peruana, pero lo aprendido en San Francisco le dio la seguridad para imaginar un menú que rindiera homenaje a los pueblos pescadores de América Latina. Los primeros años de Agua y Sal fueron sin duda difíciles, pero con el tiempo entendieron que lejos de restarles, la adversidad del inicio los obligó a ganarse con calidad y autenticidad una reputación hoy en día intachable.

A random weeknight out with the wife, and this place delivered big time - the food was excellent (ceviche sampler and tacos and I forget the fish my wife had, but it had plátanos with it and was amazing!). Will definitely be back (just wish they had some things our kids would like to so we could do it more regularly)

Really nice spot! First of all the restaurant itself is comfortable and waiters are attentive and friendly. However the star is definitely the ceviches! They come beautifully presented, and we love how fresh the ceviches taste, the seafood pieces are a nice size and smartly complimented by different ingredients for added textures. I really appreciate that they don’t rely on lime like most other places’ ceviches where the seafood is overpowered by citrus. We especially enjoyed the Ceviche Mixto and thought that the accompanied dressing is just perfect! We came back here at the end of our short trip just to have it again!

Great food, the cebiches are excellent and other dishes too. The atmosphere is great too. The only downside is the service and a little stuck-up attitude. Don't expect the usual friendly CDMX service, they think they're special.

Me and my boyfriend came here for our final night in Mexico and it did not disappoint. We ordered the tomato cebiche salad to start, which was not for me as it was absolutely drenched in oil - something to note if you don't like oil. My boyfriend had one oyster which came with a nice pickled onion dressing/dip. He also had the Marlin Tostadas starter which were really nice type bbq flavour. For mains we had the salmon trout and paella which were both great. You do not get many vegetables with the salmon however you get a very generous salmon portion. The paella portion was also very generous with a lot of shrimp. Overall the service was prompt with good English. They made dietary requirement changes as requested. Prices were reasonable and worth what you get!

Tried the ceviche tasting based on previous reviews and was really disappointed.. I love ceviche normally but I really had to force myself to try and eat these. The dishes were beautiful but the taste didn't match...
