Pero en ocasiones el crítico si se arriesga cada vez que descubre y defiende algo nuevo. El mundo suele ser cruel con el nuevo talento. Las nuevas creaciones, lo nuevo, necesita amigos. Anoche, experimenté algo nuevo. Una extraordinaria cena de una fuente singular e inesperada. Decir solo que la comida y su creador han desafiado mis prejuicios sobre la buena cocina, subestimaría la realidad. Me han tocado en lo más profundo. En el pasado, jamás oculté mi desdén por el famoso lema del Chef: "Cualquiera puede cocinar". Pero al fin, me doy cuenta de lo que quizo decir en realidad: No cualquiera puede convertirse en un gran artista, pero un gran artista puede provenir de cualquier lado. Es difícil imaginar un origen mas humilde, que el del genio que ahora cocina en el Restaurante Apetit y quien en opinión de este crítico, es nada menos, que el mejor Chef de México. También se me hace muy raro qué no te den un ticket impreso, te lo mandan a tu correo o por WhatsApp pero han pasado 24 horas y no he recibido el ticket de mi compra, les he llamado toda la mañana y no contestan su línea... La comida si bien no es mala podría ser de mejor calidad y mas por el precio que se está pagando. Los sabores son bastante simplones y sin chiste. Decepciona que algo que se ve tan agradable a la vista no lo sea tanto con el paladar. The presentation is fabulous. Most of their dishes look super fancy. The problem is that the taste does not match the view. The food, although not bad, could be of better quality and more for the price that is being paid. The flavors are quite simple and no joke. It is disappointing that something that looks so pleasing to the eye is not so pleasing to the palate.
