Arriesgamos muy poco, y sin embargo usufructuamos de una posición situada por encima de quienes someten su trabajo y su persona a nuestro juicio. Prosperamos gracias a nuestras críticas negativas, que resultan divertidas cuando se las escribe y cuando se las lee.
Pero la cruda verdad que los críticos debemos enfrentar es que, en términos generales, la producción de basura promedio es más valiosa que lo que nuestros artículos pretenden señalar. Sin embargo, a veces el crítico realmente arriesga algo, y eso sucede en nombre y en defensa de algo nuevo.
Anoche experimenté algo nuevo, una comida extraordinaria hecha por alguien único e inesperado. Decir que ese plato y su cocinero pusieron a prueba mis preconceptos equivaldría a incurrir en una subestimación grosera, cuando lo cierto es que ambos lograron conmover lo más profundo de mi ser.
 The critic's job is simple in more ways than one. We risk very little, and yet we enjoy a position above those who submit their work and their person to our judgment. We thrive on our negative reviews, which are funny when written and when read.
But the stark truth we critics must face is that, generally speaking, the average garbage output is more valuable than our articles purport to point out. However, sometimes the critic really risks something, and that happens in the name and in defense of something new.
Last night I experienced something new, an extraordinary meal made by someone unique and unexpected. To say that this dish and its chef put my preconceptions to the test would be the equivalent of incurring a gross understatement, when the truth is that both managed to move the deepest part of my being.
