Decir que ese plato y su cocinero pusieron a prueba mis preconceptos equivaldría a incurrir en una subestimación grosera, cuando lo cierto es que ambos lograron conmover lo más profundo de mi ser.
Antes de este suceso, nunca escondí mi desdén por el lema del Chef Gusteau: “cualquiera puede cocinar”. Pero, me doy cuenta, recién ahora comprendo sus palabras. No cualquiera puede convertirse en un gran artista, pero un gran artista sí puede provenir de cualquier lugar.
 Last night I experienced something new, an extraordinary meal made by someone unique and unexpected. To say that this dish and its cook put my preconceptions to the test would be tantamount to incurring a gross underestimation, when the truth is that both managed to touch the depths of my being.
Before this event, I never hid my disdain for Chef Gusteau's motto: "anyone can cook." But, I realize, only now do I understand his words. Not everyone can become a great artist, but a great artist can come from anywhere.
