Ya en el palenque, como se le conoce en Oaxaca a las fábricas de mezcal artesanal, los magueyes son cocidos en hornos de tierra revestidos de piedra. Con leña se calientan las piedras hasta alcanzar los 600 ºC. Y con esta temperatura la cocción puede tomar de 3 a 5 días, dependiendo de la temporada (si hace frío o calor) y de la cantidad de piñas a cocer. Pero por lo regular en este tiempo se logran cocer de 4 a 12 toneladas de maguey. Por lo regular se requieren cerca de 7 kg de leña en promedio, por litro de mezcal. Gracias a este método de cocción lenta, el maguey empieza a resaltar sus aromas y sabores que fue guardando durante todos sus años de maduración.

It's hard to recommend places here because there are so many awesome little mezcalerias with local amazingness and this is definitely among my favorite so far!

★ ★ ★ ★ ★ Great variety of mezcal, and a friendly staff. They really know what they are talking about and gonna help you to have a good "mezcal" experience. Also, they do accept payment in cards. A little bit expensive, but worth it. A place to go with your friends.

★ ★ ★ ★ ★ Very attentive and friendly staff who is knowledgeable about the Mezcal that the house specializes in. It was our first time mezcal tasting and the bartender walked us through some of the basics, kiss the mezcal, don’t mix it with anything but water, and drink it slowly. We did the basic tasting which cost 180MXN, and got three 1 oz. shots of mezcal. The bar is very cute, decorated with clean lines and pictures of the family who made the mezcal. Overall loved the experience of sharing time with friends while tasting some great mezcal. Even my husband who typically doesn’t like mezcal enjoyed the experience and actually liked the mezcal!
