About El Bajío

Carmen Ramírez Degollado, “Titita”, como le dicen sus amigos, nació hacia 1940 en un Xalapa lleno de aroma a hierbas, a café, a especias, a maíz y piedra volcánica. En casa fue donde aprendió a cocinar para su familia, envolviéndose en la vasta cocina veracruzana, sólo para después, al recorrer un México próspero y rico, enamorarse por completo de la tradicional cocina mexicana. Si bien nunca pensó dedicarse profesionalmente a la cocina, fue gracias a su esposo Raúl y sus amigos, como decidió llevar su sensibilidad culinaria a un restaurante en 1972, inaugurando El Bajío en Cuitláhuac, un sueño familiar en el que involucró a cada uno de sus cinco hijos, principalmente a Mari Carmen, Luz María y María Teresa, a quienes transmitió su pasión por la cocina de México. Hoy, cuatro décadas después, Carmen “Titita” es una chef aclamada internacionalmente, embajadora del delicioso sazón mexicano, promotora de las costumbres alrededor de los comedores familiares mexicanos y fiel vocera de la cultura culinaria en México, enfocando sus actividades en contribuir a que el sabor auténtico de la cocina mexicana perdure en las generaciones venideras, así tenga que escribir libros, hacer festivales, ofrecer demostraciones culinarias, participar en ponencias o seguir descubriendo delicias en los rincones de México.

Nice place, crowded between 12pm and 2 pm. But even so they do their best to get you a table quick. The food was delicious plenty to choose from the menú, plenty drinks. Great atmosphere for couples.

This restaurant is an excellent option for authentic Mexican food with a large variety of options. I really like that they focus on serving good portions and food full of flavor. This restaurant is also a good place for breakfast. They have great chilaquiles with chicken or steak. Average ticket is $350 pesos.

I ordered "costillas a la plancha" I've got something between a steak and a shoe. The rest, coffee, fresh fruit juice croissant all good

Definitely not my favorite, not do I expect I'll visit and of their many locations in the future. It's nice decorates (like most places here), prices are decent, food was average, but for me the dinning our experience is about the service and this place was greatly lacking... we felt rushed to order without even having a look at the menu... then the food came in waves leaving my son without his food until we were almost done (we couldn't we wait for him any longer!) It was an odd experience at best.

Great local Mexican restaurant chain located inside a shopping mall. Local dishes to try including their carnitas, mole with chicken and empanadas filled with plantains bs black beans. Waiters are friendly and English menus are available. A great introduction to Mexican cuisine in nice restaurant setting.
