About El Bajío

Carmen Ramírez Degollado, “Titita”, como le dicen sus amigos, nació hacia 1940 en un Xalapa lleno de aroma a hierbas, a café, a especias, a maíz y piedra volcánica. En casa fue donde aprendió a cocinar para su familia, envolviéndose en la vasta cocina veracruzana, sólo para después, al recorrer un México próspero y rico, enamorarse por completo de la tradicional cocina mexicana. Si bien nunca pensó dedicarse profesionalmente a la cocina, fue gracias a su esposo Raúl y sus amigos, como decidió llevar su sensibilidad culinaria a un restaurante en 1972, inaugurando El Bajío en Cuitláhuac, un sueño familiar en el que involucró a cada uno de sus cinco hijos, principalmente a Mari Carmen, Luz María y María Teresa, a quienes transmitió su pasión por la cocina de México. Hoy, cuatro décadas después, Carmen “Titita” es una chef aclamada internacionalmente, embajadora del delicioso sazón mexicano, promotora de las costumbres alrededor de los comedores familiares mexicanos y fiel vocera de la cultura culinaria en México, enfocando sus actividades en contribuir a que el sabor auténtico de la cocina mexicana perdure en las generaciones venideras, así tenga que escribir libros, hacer festivales, ofrecer demostraciones culinarias, participar en ponencias o seguir descubriendo delicias en los rincones de México.

Delicious Mexican food. I am not a big fan of chain restaurants but this one is very good and with the visit. The three salsas on the the table are very good and not very spicy: red, green and another one that tasted like mole. The carnitas are excellent, soft, with a lot of flavor. Nopal con queso for main dish is also great: nopal asado and a big piece of grilled panela cheese on the side. Pulpo al mojo de ajo is very soft... and with a lot of garlic :) recommended. Last they brought desserts that looked very good but I couldn't eat more, main dishes are large and satisfying.

Good service. Menu is not very friendly for vegetarian people. The prices are ok. Food is regular, decent for what you pay. The venue is regular.

Good place to have a bite or a drink. Ample variety of mexican cuisine. Portions are decent but a bit pricey for the mall setting. A bit loud when crowded, service is great.

Excellent mexican food and great service. Their hot cocoa and pastries were tasty and sweet. Great way to start the morning. Tried some of their Arrachera Huarache, I can’t handle food that is spicy, and I forgot to sub the salsa out. Our waiter saw me taking the salsa off my food and immediately offered to exchange it. Came back 5 minutes later with a new one, no charge. I’ll definitely come back again.

All good is very tasty. Personally I recommend Barbacoa or the Huarache with Arrachera. A little bit overpriced but the whole experience worth it. Good service overall. If you go on high demand hours be patient

I have been here 3 times. The decor is outstanding for a restaurant in high end shopping mall. Very very traditional. Clean tables, super nice staff, bartender to the table. You can't go wrong with any dish. Their specialty is mole de olla. Not spicy at all. Pork or beef. Great vegetables. More like a soup but hearty with corn on the cob. The washrooms are very clean and decorated. You can't go wrong.
