Desde que conozco este café no puedo tomar de otro, he probado diferentes cafés de diferentes regiones de México y otros países, ejemplo: café colombiano y tico (Costa Rica) y mi paladar se ha acostumbrado al sabor y aroma del café Fila. La mezcla y el punto de tostado es el adecuado, el sabor, aroma y cuerpo del café es excelente, no tiene acidez ni sabores ajenos al café. Además, es café vendido directamente por don Filadefo y su hijo, excelentes personas, cálidas y amables, son originarios de la misma localidad de Pluma Hidalgo. Si lo que buscas es un buen café directo de productores y de un comercio justo, este es el sitio.

Excelente café arábiga, tostado medio. El café se tuesta por las mañanas y se muele al instante de servirse o empacarse. Excelente sabor e intensidad. Negocio familiar en atención del señor Filadelfo.

A true coffee artisan at Fila Diamante. I was greeted like family when I met the owner. Don Filadelfio greeted my family with warm smile and freshly roasted Pluma coffee. He explained how the sea breezes from the Pacific Ocean condense at the elevation of their mountain top village. As the clouds move in they form a cirrus dense clouds. These clouds resembles a feather. Hence the name Pluma. The beneficial sea breezes contributes minerals that give the coffee a pleasant taste. The smell of roast coffee was just amazing. Caffeine fueled conversation with Don Filadelfio was full of laughter and information on how they take great care in growing coffee in a sustainable manner. Under the shade of forest canopy full of colorful birds. The location of the cafe is on the village square. We stopped in Pluma Hidalgo as we were traveling from Oaxaca city going to the coastal port of Huatulco. The roads through the Sierra Madres are to be reckon with. After a 4 hour drive from Oaxaca City to Pluma Hidalgo we stayed for two nights. Fila Diamante is worth a visit. You will not be disappointed with the his coffee.

One of my best experiences!! Starting from the best coffee I ever tried before. Mr. Fila and his family welcome you and make you feel at home. They explain you step by step how the coffee is made by his family which is already the third Generation dedicated in body and soul to grow the best coffee in the world. If you have time like we did in our case José Antonio brought us down to Fila’s finca to see the hole process, since how a coffee plant looks like how they harvest the coffee until the selection and drying steps of only the best grains. Don’t miss to visit the town and Fila’s coffee if you like coffee or chocolate, you will not regret.... be prepared for a good coffee and a dosis of adventure because the town is hidden in the mountains ?
