En Septiembre de 1989 fue el año en que Cristina Pérez y César Castillón deciden emprender un negocio de alimentos, abriendo Gaby’s una lonchería mexicana que daba servicio a los bancos y oficinas gubernamentales cercanos.

Al pasar de los años y de acuerdo a la demanda de sus clientes en 1994 deciden explorar un nuevo concepto, volviendose los pioneros de la comida corrida en Puerto Vallarta, siendo este un éxito total, en donde asistían regidores, banqueros, ejecutivos, dueños de comercios cercanos y turistas.

Su éxito se ha notado y con el paso de los años, de ser aquel pequeño patiesito de entrada de la casa se ha convertido en el restaurant favorito de muchos; motivo que los hizo crecer e incorporar parte de su casa habitación al restaurante, que desde hace 18 años oferta también el servicio de cena.

En el año 2010 Chef Julio Cesár, Licenciado en Gastronomía, hijo menor de Cristina y Cesar, toma las riendas del negocio, 100% comprometido con la calidad y el servicio, en donde con su juventud le ha comenzado a imprimir su toque personal y cambios en el menú que presentan desde su ventana vallartense lo mejor de la cocina tradicional mexicana.

Wonderful ambiance and really tasty food. The dishes I got are vegetarian (Guacamole and burrito). Paid a very nominal price for then. In the evening hours, there’s a loud screeching noise that comes from the braking of busses (maybe ) on the road. It can be annoying to hear that while eating.

The food was good. I came here with my group and I ordered their fish fillet. The sauce was very creamy. View upstairs was nice to see especially during a sunset. We weren’t really fond of their drinks though, it was kind of watered down, which deducted a star rating — it is a “restaurant bar”. For drinks, it was a glass of wine with pieces of cork in it and a bland mojito. The passion fruit margarita and their micro beer was good though.

The cooking class at Gaby's with Chef Julio Cesar is one of the best experiences we've had in Puerto Vallarta. You start the day with a walk to a local market to shop for the freshest ingredients and you end the day at a family style table eating a lunch/dinner worthy of a king. Everything in between is pure fun and education mixed with a margarita ot two. My husband and I took the class together and we learned so many great cooking tips and tricks. It was amazing how Chef Cesar was able to turn 10-20 simple ingredients into a wide variety of unique dishes. We will carry his pearls of cooking wisdom with us. Thank you for a great experience!

Wow. My chili relleno meal had tremendous flavor and the view was lovely. Live music enhanced the beautiful ambience even more. One of my top 3 meals so far in PV!

Not very friendly waiter and disappointing foods. I ordered deviled shrimp but it just tasted like shrimp cooked in ketchup and hot sauce. When I asked the waiter, he acknowledged that the "secret recipe" has ketchup in it. Ketchup is something I don't expect as a secret ingredient at a traditional Mexican restaurant.

Food is delicious, atmosphere geared towards tourists. The only I really didn't like was the sala. Very flavorful but not enough heat from the peppers. Just a wonderful evening.

Service was great and they had live music. The decor is as cute as you get. It’s right next to the famous Church of Our Lady of Guadalupe. They were kind enough to allow me to sit at the reserved area which is very cute and you can see the ocean from The balcony. The food was ok and not the very best but it makes up for it for the cuteness and the Mexican experience.

We live in California, now celebrating our 18 years of marriage in Mexico. Everything is so colorful, the streets, its people, the drinks, the restaurants. First week we were in Puerto Vallarta. Walking through the center we found this colorful place. You enter by going up a staircase that is at street level and is on the first floor. We liked it immediately and sat at a table on the terrace, there are also tables inside and on a very spacious patio. The staff is very helpful and friendly, since I know what they offer as a Mexican in California and this menu has dishes that I don't know, they helped me choose what to eat, it helps a lot that I speak Spanish. We ordered the classic guacamole and it arrived quickly. Then fajitas of three meats: beef chicken and shrimp to share. A huge plate arrived and Sergio - the waiter - put it on a tray table, added tequila and set it on fire. Quite a show. Also yummy. We spoke with another of the waiters: Muriel, a very nice Indian who gave us a lot of information since it was our first day in the city. I highly recommend it.
