We had high hopes for Hato as we saw great reviews and the small restaurant was beautifully decorated with great ambience. The presentation of the food was fantastic unfortunately the food doesn’t deliver the same flavour. Maybe I’m being more critical being Asian but my Tonkatsu was disappointing in terms of the flavour of the broth and the charshui was 2 slices of bacon. The gyozas were tiny and they were deep fried rather than pan fried with crispy bottoms. The coating on the chicken karage were too floury. I’ve been to many Mexican fusion Japanese restaurants in Mexico, unfortunately Hato just didn’t deliver in terms of food. However, if you’re young and hip, then Hato is the place to be as the setting is very cool. I loved the open kitchen and on the night the restaurant was busy with great vibe. Unfortunately I only score Hato as being average because of the food.

Quality ramen in a neighborhood full of impostors. This was easily the best ramen I've enjoyed while in Guadalajara. And the Chapultepec neighborhood has a surprising amount of options. I enjoyed a delicious and hearty bowl of tonkotsu, which was rich in flavor and had a depth of complexity that is hard to find at any of the many other local options. Service is good but really depends on when you visit. It would be great for a date night, and evening out.

Tonight was my third dinner at Hato. I've tried 3 different ramens there -- Tonkatsu, beef brisket and foie gras. Tonkatsu so far is my favorite. Tonight, my Mojito and chicken karaage were also delicious. The sake in my Mojito was not overpowering, and my karaage was not greasy. My server Miguel spoke fluent English, and was super friendly and helpful. Undoubtedly, I will return.

Went to this place during vacation and it was amazing. One of the places with the best service and food. Thank you to our waiter Mayret Pajarito she was great!! Definitely coming back to this place!!

There a lot of reasons this place was listened as number one ramen on so many websites. Best dining experience I had on my trip here. Warm host, quick service, amazing atmosphere, perfect presentation, not too loud, and the best ramen I’ve had. Can’t recommend it enough.

Place was great looking and well designed, it made a good impression at first. Service is attentive and I love that from any restaurant, really appreciate it. Food taste and portion was ok, however it completely misses that real taste of japanese food, noodles didnt look and taste natural or freshly made, pork belly was poorly cooked and taste was plain. In my opinion this place is great for those who would like to start tasting japanese ramen; not for seasoned ramen lovers. Prices are a bit high for Guadalajara, but the zone and the ingredients are not cheap either. Something that caught my attention was the fact that I asked for red-tonkotsu (which they didnt had) and offer me a tonkotsu with a red sause on the side for me to add... which they charge me an extra on the bill... Finally I found out Sapphoro they sell is not japanese made... canadian instead.. cheaper to get maybe???

We had the wrap and the Ramen Rojo Picante and Briskel. Both were delicious. The meat at the Briskel was a tiny bit over cooked, but therefore they got the noodles and eggs on point. I orders a side dish of corn, which was charged at 15pesos, for a tablespoon of it. The waitress was kind and probably new. She got the drinks confused and forgot to tell the kitchen to leave away some ingredients that I am allergic to. All in all ok experience due to the food and atmosphere.
