★ ★ ★ ★ ★ I passed this distillery, the Fábrica de Mezcal Valle Oaxaca, while on the last hours of an endless ADO bus trip from Tapachula to the city of Oaxaca. On this trip, we slowly climbed from Chiapas onto whatever plateau Oaxaca exists upon. Once upon this plain, everything more or less pointed to Mezcal production, and "fábricas" of mezcal began to appear. They use the same word here for distillery that they use for factory.
Unfortunately, the Fábrica de Mezcal Valle Oaxaca was closed when we flew by it, but others closer to the city were open, their wooden fires were burning and those big chunks of the blue agave plants were ready for whatever was to be done with them. These were factories in production.
Mezcal factory touring is all the rage in Oaxaca. You can even tour at home via video. The newspaper El Universal in Mexico City made a five-minute video tour that pretty much includes everything and seems extra authentic since they didn't feature a tourist fábrica de mezcal.
