Olinka - 76020 Santiago de Querétaro
About Olinka
We are a creative cuisine led by Chef Emiliano Ayala. The purpose of our restaurant is to highlight the quality of the ingredients we use.
Olinka means “place of movement” in Nahuatl and it can also be translated to “where the movement emerges”. The restaurant first opened its doors on January 10th, 2020. With it, Nadia and Emiliano wanted to create a welcoming atmosphere as well as a superior culinary experience.
In Olinka we seek to intervene the least possible in the products in order for the ingredients to stand out for their quality and to preserve their original flavor. It is a place for people to relax and enjoy themselves. An elegant space that maintains its simplicity.
Our suppliers
Tortillas are sourced directly from señoras who nixtamalize their locally grown corn to make tortillas by hand. Let’s preserve the basis from our roots for better sourcing of foods, the tortilla.
All bread and pastries on our menu come from our friends and neighbors Saint Honoré Panadería, who take particular care in their processes, from the ingredients they use to their commitment to delivering bread as it should be.
La Gallinita Chula organic eggs, come from a farm in Celaya where they take care of their chickens’ growing conditions (free-range) in order to produce the best eggs; hormone and antibiotic-free.
We support the best cheese producers of the region of the Bajío, our selection is only a small sample of what is available. Dairies from La Factoría, La Grande Chèvre, Flor de Alfalfa and Cava de Quesos Boca Negra. Congratulations on showing that we are doing things right with lots of flavors!
Vegetables are brought by Distribuidora de Alimentos Xochimilco, who select and deal directly with national producers. They do fair trade in order to bring recognition to the labor from Mexican farmers.
Fish and seafood are freshly flown to us once to twice a week depending on the time of the year. El Sargazo guarantees their freshest supply when they get delivered to the restaurant and most importantly, fishermen follow the catching season of each product, in order to ensure the breeding of the species.

★ ★ ★ ★ ★ Great food, coffee and juices in a chilled location. Famous for breakfast and their French toast but also worth an afternoon visit for good quality burgers and pizzas.

★ ★ ★ ★ ★ I've been here quite a few times and enjoy the food. My experience today was a bit frustrating as my wife and I don't get out of the house much these days due to COVID. We decided to come here for a mid-week lunch and found the place empty. Perfect for us. It was hot out and opted to sit inside. We walked in and requested a table by the large window in the event that more customers came in, we could feel comfortable dining without our mask. We were promptly told we could not sit next to the window and to choose a table with two chairs away from the window. I'm baffled. I look over at the window and there are individual tables pushed together to seat four with plenty of room on each side, easily able to be separated. I look around the restaurant once more, it's empty, and the only couple seated outside is getting up to leave. I ask if we can separate the two tables with enough room to maintain social distancing norms and am told no and the waitress walks away. We reluctantly sit down but we're tempted to leave given the service up to this point. We did enjoyed getting out of the house for a bit. Fortunately it was slow while we were there and were able to eat comfortably. I do wish they would make a greater effort to accommodate their customer, particularly during these times that are so tough for the restaurant and service industry. Overall, the meal was tasty enough for 4 stars but the service the older woman gave us left a bad taste in my mouth. A solid 3 star experience today.

★ ★ ★ ★ ★ The food and drinks were very good, the service was wonderful, and we loved the setting/vibe It was just a bit pricey for the size of the servings. I would gove 4.5 stars if possible.

★ ★ ★ ★ ★ Tried to eat there for dinner, around 4pm. Studied the menu and ordered. The server left and returned with my drink then informed me they didn't have what I ordered. It was early, 4pm, so they should not have been out of ingredients. And they should not have items on the menu, and allow people to order, that they don't serve. Bad form. I opted to leave so I can't review their food. They made an awful first and only impression.

★ ★ ★ ★ ★ Super. The food was delicious and interesting. The decor is beautiful and the service was just perfect. They don't serve alcoholic drinks, which would have enhanced flavors of the short rib or the rice with chorizo Argentino. Interesting selection of appetizers and entrees. Definitely a great menu!

★ ★ ★ ★ ★ This restaurant offers the plates with organic ingredients. I went for the breakfast and I was satisfied with the quality of the foods.
The French toast is the most famous menu for breakfast. Many people orders this plate and tastes delicious. I do recommend tosta serrano. The mustard source matches well with ham.
The coffee was from Chiapas. After receiving order, the coffee beans were ground. So it took time to be served but the aroma was perfect.
