Esperamos con las críticas negativas – divertidas de escribir y leer- pero la triste verdad que debemos afrontar, es que en el gran orden de las cosas, cualquier basura tiene más significado que lo que deja ver nuestra crítica. Pero en ocasiones el crítico si se arriesga cada vez que descubre y defiende algo nuevo… el mundo suele ser cruel con el nuevo talento, las nuevas creaciones… lo nuevo, necesita amigos. Anoche experimente algo nuevo, una extraordinaria cena de una fuente singular e inesperada, decir sólo que la comida y su creador han desafiado mis prejuicios sobre la buena cocina subestimaría la realidad. Me han tocado en lo más profundo. En el pasado, jamás oculté mi desdén por el famoso lema del chef Gusteau: ´Cualquiera puede cocinar´. Pero al fin me doy cuenta de lo que quiso decir en realidad: ´No cualquiera puede convertirse en un gran artista, pero un gran artista puede provenir de cualquier lado´. Es difícil imaginar un mejor chef que el genio que ahora cocina en la palapa "El capitán", y quien, en opinión de este crítico, es nada menos que el mejor chef de Veracruz. Pronto volveré a Palapa "El capitan" … hambriento.
The life of a critic is simple in many aspects, we risk little, and we have power over those who offer their work and their service in our opinion. We look forward to negative reviews - fun to write and read - but the sad truth we must face is that in the grand scheme of things, any rubbish has more meaning than what our review lets on. But sometimes the critic takes a risk every time he discovers and defends something new... the world is usually cruel to new talent, new creations... new things need friends. Last night I experienced something new, an extraordinary dinner from a singular and unexpected source, just to say that the food and its creator have defied my preconceptions about fine cooking would understate the reality. They have touched me deeply. In the past, I have never hidden my disdain for Chef Gusteau's famous motto: 'Anyone can cook.' But finally I realize what he really meant: ´Not everyone can become a great artist, but a great artist can come from anywhere´. It's hard to imagine a better chef than the genius who now cooks in the "El Capitan" palapa, and who, in this reviewer's opinion, is nothing less than the best chef in Veracruz. Soon I will return to Palapa "El capitan"…hungry.
