About Panaderia Scandinavia

In 2011 he converted his back yard patio to a 1.5 person bakery (It was only 12 square meters).

First he was selling bread to markets and restaurants and to the occasional customer that would find the remote but picturesque little bakery in Monte Coxala. It didn’t take long until the workload got overwhelming and he hired Josue Arredondo, a local pizza baker from Jocotepec. 

But the tiny place got too small and they moved the bakery to West Ajijic. It felt gigantic in the beginning. Customers could now find the duo and the sales increased. Then it was called “Peter Panaderia”. More help was hired and pretty soon, that location was also outgrown.

 

They moved to the current location in 2015 due to the accessibility, parking space and nighttime security. Now they could also sell coffee, drinks and open a bistro. The name changed to “Panaderia Scandinavia” due to trademarking concerns. At the same time, Josue became the manager and shareholder.

 

The goal has always been to replicate the best of the bakeries from Scandinavia and Europe and to continue to evolve the products. The goal is not reached, it’s only the beginning.

The bread is the best, everything these sell is exceptional. Great sandwiches at very reasonable prices. Anyone who thinks they are overpriced must either be cheap or not get out often. All the employees are very helpful and considerate.

Great place to buy bread (they have a good variety) Great place for a sandwich. Most of the staff speak English. Lots of parking. They also have a good selection of beer. They haven't changed. Still a great place to visit.

Limited seating, but excellent coffee and friendly staff, I understand that they also have the best bread in the village, baked inhouse off course. The chocolates aren't bad either.

This is a lovely bakery, complete with delicious chocolates to go with your coffee. But even before that the sandwiches they make are really good, on the bread they make. Think NY deli sandwich! And then the bread and pasteries, really lovely. My favorite bread is the apple walnut, get there early or i will beat you to it.

Disappointed in the sandwiches. Ordered Salmon, got 1 thin piece with lots of lettuce. Also, Selva and Mozarella had no mozzarella at all.

Some of the best bread in town. Their Varmland makes great avacodo toast. Always sliced and fresh.

A very very good bakery. Their bread is always fresh and very delicious. They also have croissants. They have delicious sandwiches, but the only downside is that it takes a very long time to get your sandwich.
