El pozol, es una bebida de maíz blanco cocido y molido, batido en agua con la mano. Para los chiapanecos el pozol, es además de una bebida refrescante y alimenticia, un complemento dietético seminatural y, modernamente, para otros un tentempié.
El pozol es una bebida compuesta de masa de maíz cocido, cacao y granos de pochotl, misma que la denominaban pochotl. Con el tiempo esta palabra fue transformada por los españoles en pozol, como se le conoce actualmente.
