★ ★ ★ ★ ★ We started the day being picked up from our Airbnb in Centro and went 15 - 20 mins out of the city to Miguel’s lovely property surrounded by fruit trees. After a quick coffee and choosing the food we’d make we headed out to the market to pick up what we needed for our meals.
When we returned we got into cooking and started making tortillas for empanadas.
Next it’s time for salsa, soup and the Mole. Last but not least we made plantain de moletes - this was our favourite dish.
Of course eating the food after we made it was a huge highlight and was enjoyed with mezcal and fresh fruit water.
Miguel is a wonderful host and you really feel like you are being invited into someone’s home and family.

★ ★ ★ ★ ★ An incredible experience, Miguel and Estella were fantastic hosts, so warm and welcoming (despite our lack of Espanol). Visiting the market with Estella was great fun and cooking with Miguel was brilliant, so much information to absorb and recipes to take away which are super useful when learning in a new environment, with different and new ingredients. The location is also beautiful, we would highly recommend visiting Quinta Brava.

Definitely the best cooking class I’ve ever taken given how comprehensive and hospitable the whole experience was from the pickup from our hotel by Rafael to even the friendly and adorable dogs at the property. It really felt like being invited to a friend’s home to share their love for cooking and good food. You’ll really come away from the experience with a good appreciation of the delicious Oaxaca cuisine as well as a full belly!

He really makes sure you get the most out of this experience by editing the menu to include items that you are most excited to learn about. The food is fantastic, whether you are a meat eater, or (like me) a vegetarian. Miguel knows how to bring out the beautiful flavors of every dish. Estella was a joy to spend time with, helping us in the kitchen and guiding us through the market. And the property is gorgeous. If you love food, don't miss this hands-on experience with a knowledgable and local chef. Muchas Gracias Chef Miguel!

★ ★ ★ ★ ★ My brother and I signed up for the cooking class after looking at a lot of options online. Simply put, we made the right decision. Starting with picking us up at our Airbnb in the morning, everything slowed smoothly and professionally. The class takes place at the most charming little urban farm filled with ducks, chickens, dogs and gardens. I went into the day with apprehension due to some high maintenance eating restrictions and Chef Miguel not only worked around those when choosing the menu, but never made me feel like the odd one out. I would highly recommend this experience regardless of your cooking skill level. And be sure to get some of the chocolate before you leave, it was like nothing we'd ever tasted before. A perfect day all around. Thanks again.

★ ★ ★ ★ ★ Miguel's teaching method is exactly what we were looking for. He shows you methods and processes that you can take home and actually apply in your own kitchen. We also really appreciate the point he makes about enjoying the cooking and preparation instead of rushing through the process. This time can be an opportunity to connect with your family and those around you. As for the food, it was amazing! As was the market they take you to to buy the food you'll be preparing. What a beautiful space and neighborhood!
Since being home we've found that a cast iron griddle on top of our wood stove works great for roasting vegetables for salsa, making all things Maseca related, and for finishing quesadillas!! Thanks for sharing these skills with us. We make fresh tortillas almost once a day now. This was a major goal of ours.

★ ★ ★ ★ ★ Miguel and Jess were absolutely incredible. I had come for the chocolate class while two other guests were there for the cooking class. They were kind enough to combine the two classes after checking with us so that we could all learn everything together. Miguel’s passion for food is evident and I learned a tremendous amount through his cooking style. We took a trip to the mill, the market, and made some really incredible dishes with a few key ingredients. The family was so welcoming and kind and made our group feel like we were old friends.
Finally, I had the pleasure of riding Rafael who drove us to and from Miguel and Jess’s home. Rafael was a joy to be around. He was excited to practice his English and patiently teach me some Spanish, and shared a lot about his love of Oaxaca on the drive. All together it is one of the best experiences I’ve had in Oaxaca and I can’t recommend it highly enough for anyone traveling in the region.
