Inolvidable experiencia campestre. Martin, el dueño, proporciona un pequeño tour por ciertas áreas del rancho y su explicación e historias son fascinantes. La degustación posterior es maravillosa, sus productos lácteos son los mejores que hemos probado! Imperdible!

La mejor opción para conocer un rancho con fabricación artesanal de queso de oveja, poco común en nuestro país. Su propietario, el Dr. Martín López, se encarga de compartir personalmente su proyecto, que lo ha llevado a que en pocos años sus quesos hayan sido galardonados con múltiples premios a nivel internacional. Al ser producción artesanal limitada, cada mes hay disponibles distintos tipos de queso, desde frescos hasta madurados, todos verdaderamente deliciosos. Además el doctor y su esposa se han preocupado por contribuir con la comunidad rural y apoyan a la población local en la producción y comercialización de artesanías de lana. Una visita indispensable si vas a la ruta del queso y el vino en Querétaro.

The farm is owned and operated by a married couple who retired from their corporate jobs in Mexico City. The owner led my tour of the farm - and you can usually book between 10AM-12PM. His cute dogs will greet you at the gate and happily tag along. After learning about the cheese making process, bleating at the sheep, and admiring the beautifully-feathered chickens, you have the option of trying 1, 5, or 8 cheeses. I opted for the 5-cheese (200 Pesos or ~$11) The cheeses were the best I’ve ever tasted and if I’m not convincing enough, they have a wall full of international awards that speak for themselves. The area where you eat the cheese is outdoor and the seating is made from bales of hay so don’t wear anything fancy, it’s a farm after all and bring bug spray if mosquitos really bother you. If you’re looking for a way to experience something local and unique to queretaro, this is a must. The experience felt like one I could only find if I were a friend or an acquaintance and it’s not commercially touristic in any way - no big tour bus parking (no real parking lot at all), no tour guides in solid color polos with logos, and no sales pitch at the end of the tour because the cheese is always on pre-order from local establishments. Getting here is the biggest challenge because it’s not easily accessible from a main road, so you’ll have to rent a car or take a taxi/uber. I opted to take an uber because my trip was really last minute and I didn’t want to deal with the hassle of renting a car.

The owner gave us a wonderful tour of his ranch, which ended with a fabulous tasting of 8 sheep’s milk cheeses. We brought a bottle of rose, apples, figs, mixed nuts, and Serrano ham and had the loveliest meal seated on bales of hay in a shaded area. What a lovely Saturday picnic. We also tried the helado de queso, which essentially tasted like sweetened whipped cream cheese. Thank you Martin for being the most hospitable host and for even dropping us off near town. We loved hearing your story. A highlight for sure.
