En el anexo a la casa del balcón, que ahora forma parte también de las instalaciones del hotel Agua Escondida, podemos encontrar una pared donde aún se encuentran las ollas de barro incrustadas, mismas que contenían en su tiempo monedas de oro, plata y joyas, propiedad de los primeros dueños de esta casona.
Dentro de la Casa original, destacaba un abundante manantial de agua cristalina, que recogía una hermosa fuente donde se distribuía para regar patios y jardines. Este manantial se bifurcaba al interior de la construcción de lo que ahora se conoce como el Centro Joyero, y que antiguamente se le conocía como el callejón del “agua escondida” motivo del nombre del hotel.
Actualmente el hotel Agua Escondida ha ido integrando algunos edificios anexos, mediante unos puentes elevados, por el Emprendedor Don Julián Cuevas, fundador del Hotel. Uno de estos edificios, donde ahora se encuentra el estacionamiento del hotel, pertenecía a Don Manuel Castrejón Gómez, otro personaje de Taxco que fundó e inventó la famosa “Agua de Taxco” y la limonada “Yoli”. En 1990, mediante un decreto del Presidente Carlos Salinas de Gortari, el Hotel Agua Escondida (La Casa del Balcón), fue declarado Monumento Artístico e Histórico, y considerado Patrimonio Cultural.

★ ★ ★ ★ ★ La Hacienda was by far our most refined meal at Taxco. The dishes were presented with care and imagination, and the food offered that extra touch of creativity present in modern Mexican cuisine, like adding chamomile honey to "fruta de temporada" (seasonal fruit) and a hint of squid ink to "chilaquiles tliltic" (blue chilaquiles). I also enjoyed the tidy dining room, with rather pleasant boleros playing in the background.

★ ★ ★ ★ ★ We came here every day in Taxco - there were plenty of other good places to eat but this Hacienda is a gem. It felt like being at a Michelin restaurant. Two-tone tortillas of blue and white corn - a salsa ground in a mortar and pestle at our table, a sweet and savoury rosemary swirl bun for our delicious coffees. We came for breakfasts and lunch and each meal was so special. It felt like being at a show, every plate was creative and gorgeous. Also of course the food was some of the best food we’ve had in our time in Mexico which is nuts cause everything is delicious. Also! We went on our friends birthday and they brought out an amazing cake for free and all sang for him. The kindest, most delicious restaurant in Taxco. Thank you!

★ ★ ★ ★ ★ While lacking the views of the cathedral square's rooftop restaurants, this hotel restaurant managed to serve the best food, so far, in our visit to Taxco.
A wonderful Aztec soup, a table-side prepped Rosa Mole were the highlights.
Solid cocktails, reasonable ambience, professional service.

We came here three times because the food was so delicious, and we loved everything (sopa de fideo seca, huarache a la mexicana, chilaquiles…). Highly recommend this restaurant — similar price to other places on the zócalo but better quality than the first place we went.
