El Rey del Aguachile nace 2015 con el objetivo de dar a conocer la cocina de Baja California, desarrollando nuevas creaciones culinarias inspiradas en el concepto BajaMedGdl
La cocina BajaMed es una cocina fusión de Tijuana y otros lugares en Baja California, México, combina los ingredientes típicos de la cocina mexicana, como el chicharrón y el queso Cotija, con los de las cocinas mediterráneas, como el aceite de olivo, y las asiáticas, como el limoncillo (hierba limón). Platos de la cocina BajaMed tienen como foco la comida fresca, cosecha de Baja California. Al llegar a Guadalajara hemos adquirido influencia de la comida de aquí dando paso a nuevos sabores para el deleite de nuestros clientes y para la innovación del restaurante.

★ ★ ★ ★ ★ The food was delicious and beautifully crafted. The mixology bar is one of the best, I loved the Rosarito. Every item was well prepared and the service was outstanding. The owner even came out to say hi to us and checked to make sure everything was to our liking. Living close to Baja California all my life, El Rey del Aguachile, although in Guadalajara, truly has that Baja ZEST. I highly recommend this restaurant to anyone that enjoys seafood as much as I.
