It’s the various meats of the cow head. you can choose which parts of the head you want like checks or tongue or ask to have it all moces together. Don’t knock it if you don’t try it. If want to try authentic food this is it! The salsa holly cow I can’t even explain how different and life changing it is. I wish I was able to speak to the lady who made it. She makes 2 version one mild and one HoT. they don’t open till late evening. ??
