★ ★ ★ ★ ★ Este es el verdadero sabor de la exquisita Birria de Aguascalientes elaborada con carne de borrego, con o sin la salsa que es clave de su singular sabor, servida con un consomé al que se le pueden añadir menudencias como el hígado, riñón, o corazón del animal, siempre a pedido y libre elección del comensal, todo con deliciosas tortillas blancas recién hechecitas, y con salsas molcajeteadas o cocidas, limones, orégano, etc. Un inconveniente de aquí es que suele batallarse para conseguir lugares debido a que acude mucha gente, y a título estrictamente personal agregaré que llegan "músicos" improvisados con sonidos poco agradables y pidiendo "cooperación" por su estridencia poco armoniosa; sin embargo tan pronto le sirven a uno sus platillos, nos olvidamos de detalles por demás cotidianos y nos ponemos a disfrutar la rica comida con su incomparable sabor a lo nuestro. ¡Muy buen provecho!
