                 About our cooking school and how do we work:         

 

A short introduction about how my cooking school work’s and what you can experience with us.

 

In my cooking school which is located in Colonia San Antonio in San Miguel de Allende, GTO, Mexico, we offer all year long cooking classes and market tours or combinations of both. Most of the days we get booked for private reservations, but in low season we offer also some days for public group classes, the monthly calendar of them we post here on our website or you can request it to my email. The public group classes or tours, can fill up to 8 people, which gives a great opportunity to meet new people, to share your experience and socialize.

 

If you would like to book me private for personal training, or a cooking class for you, your family, a group or for someone else as a gift, or if you would like me to train your staff or cook and serve for you private or cater your event, then please contact me direct to my email [email protected]

 

The class can be made as a “Demonstration Class” or as “Hand’s-On Class” in which of course I will adjust the activities to the abilities of each participant, so beginner or professional, you all are welcome. During the class I will show you lots of tips and tricks and also how to manage and refine culinary techniques and of course I am there to answer all your question and to help when needed. Your private class I can give in English, German or Spanish, however you prefer. 

 

I am specialized in Mexican Pre-Hispanic and traditional Mexican Mestiza Cuisine, French Cuisine, Spanish Cuisine, Italian cuisine, German Cuisine, International Cuisine, Food Science and also salty and sweet baking. I also teach healthy cuisine courses for vegetarians (all types), Vegans or people with nutritional inefficiency or alimentary restrictions including gluten free cuisine. 

 

Arriving at our house/cooking school for your cooking class, we will welcome you in and offer you some fresh natural and also flavored water, after I will seat you in my kitchen on the working table, at your reserved spot. First I give 30 minutes’ theory introduction about history of techniques and ingredients we will use during the class and after we start with the pre-preparations. After we cook together (usual 4 recipes per 3-hour class) and of course all we make will be eaten, there is always lots of food.

 

I promise professional & educational teaching with traditional and new refreshing cooking techniques and also lots of fun by learning to make complete natural handmade food plus that you will enjoy delicious dishes. I will provide the kitchen with full professional equipment, all kitchen utensils and food supplies to insure a professional teaching quality and all recipes of the class will be provided after to your email.

Chef David is extremely knowledgeable and a very effective and patient teacher. In addition to techniques and preparation, you will learn about food in Mexico and agriculture. Bonus: The food you prepare makes an excellent meal.

David is a terrific guy and knowledge chef. He provides a huge menu to select from (we cooked ceviche, mole, tacos, chilaquiles). You will not leave hungry and you will cook delicious fresh dishes that seem out of reach for a beginner like myself. Highly recommend for any skillset. Great way to learn more about Mexican food culture too.

A friend knew we were headed to SMA and gave us a gift cert for a private cooking class with Chef David. She definitely knew what we love to do and this was such an amazing gift! We travel all over the world (pre-Covid) and have done cooking classes everywhere, and this was definitely one of the best!! Chef David gave us an extremely long and varied list of dishes we could choose from to make - from breakfasts, salsas, and desserts to ceviches, moles and incredible sounding entrees. This is so much better than just doing a standard menu that is taught at every class. We met at the local market and started with a tour there, trying different kinds of fruits and drinks. We purchased certain fruits and vegetables that we would need for our dishes. Then we went back to his home where he has a great commercial kitchen set up for the class. Chef David is extremely knowledgeable about all kinds of cooking and also discusses pre-Hispanic foods and methods of cooking. This is a hands on class, where you get to do some cooking and also get to watch his techniques. The recipes were absolutely delicious, we were completely stuffed after eating our creations - we skipped dinner! We so look forward to making our recipes now at home. We chose nopales salad, mushroom soup, tuna ceviche and cochinita pibil. They were all fantastic, but the sleeper was definitely the nopales salad - so incredibly flavorful and so so easy to make!!

This was our 5th class with Chef David, and once again he outdid himself! Great historical info, cooking techniques, and the most delicious food. We picked four dishes that use ingredients also readily available in the US. Within an hour of the end of class we received the recipes via email. Fun afternoon which all enjoyed. Don't miss this, you won't be disappointed!!

My wife and I enjoyed a fabulous afternoon with Chef David in a private Mestiza Cuisine cooking class. In addition to being a fantastic chef, he also is a wonderful story teller, historian of Mexican culture and culinary arts and, perhaps most importantly for a cooking class, a great teacher. Although I consider myself a pretty good cook of Mexican food, I learned a tremendous amount. And the food we cooked together was so delicious and abundant, my wife and I found it hard to stop eating. Truly, it was among the finest Mexican meals we have enjoyed on many trips all over Mexico and in the US too. I cannot recommend Chef David’s classes more highly.

Chef David's cooking class was AMAZING!!! My husband and I absolutely loved it. We consider ourselves pretty good cooks, but still learned a TON not only about Mexican cuisine but new cooking techniques. The dishes were DELICIOUS and he used the best, most high end ingredients. 10 out of 10 recommend!

Going to the market and then cooking with David was hands down the best thing I did on my trip to San Miguel. He is a professor and trains Mexican cooks on the history and cooking techniques used before the Spanish arrived. At the market, he showed us which foods were pre-Columbian and which were in danger of being lost entirely as the world transitions to foods that can be mass-produced. The food he taught us to cook at his home was delicious - be sure to arrive hungry because you'll be eating well. All in all, it was an incredible experience that I feel lucky to have shared with my 15-year-old.

We have taken more than one class with Chef David, however this time we chose an Italian menu that was incredible. His fresh approach to cooking is simply exquisite, starting with beef carpaccio, then homemade pasta stuffed with shrimp in a fresh tomato sauce, finishing with veal saltimbocca and a little sweet with amaretto macarons. If you take one cooking class in San Miguel this should be the one you choose. Bravo Chef.
