★ ★ ★ ★ ★ Una de las guacamayas con más tradición en León. Ahí siempre al pié del cañón está don Diego y su familia que son muy agradables y amables. A diferencia de otros lugares la salsa de jitomáte (o picó de gallo), la hacen aquí mismo y se diferencia por tener cubos más grandes de jitomáte recién picados y por el nivel de picor alto que es para tenerle respeto.
Pero si no comes tanto picante puedes pedirla con la salsa sin chile o mezcladito para mantenerte en zona segura.
Además de la clásica guacamaya (tortas de chicharrón durito), otro imperdible es la carne molida (tártara) que puede ir en tostada, sobre taquitos dorados, sobre un durito o con tu guacamaya. También hay cueritos y orejita de cerdo incurtidos. Y todo lo que pidas lo puedes coronar con aguacate.
Apaga el fuego del picante con una agua de horchata que está muy buena y realmente ayuda a seguir disfrutando sin llenarte de aire. Si eres nuevo en esto del antojito, al final ve por un antiácido para equilibrar el PH del estómago o por una cebadína clásica de León. Tu estómago lo va a agradecer.
No le doy 5 estrellas por que considero que aún hay oportunidad de mejora en la limpieza (como saleros y los limones se sentían pegajosos).

One of the most traditional macaws in León. There always at the foot of the canyon is Don Diego and his family who are very nice and friendly. Unlike other places, the tomato sauce (or picó de gallo) is made right here and differs by having larger cubes of freshly minced tomato and by the high level of heat that is to have respect.
But if you don't eat so much spicy, you can ask for it with the sauce without chili or mixed to keep you in a safe zone.
In addition to the classic macaw (hard pork rind cakes), another must-see is ground meat (tartar) that can go on toast, on golden cubes, on a durito or with your macaw. There are also incubated little horns and pig's ear. And whatever you order you can top it with avocado.
Turn off the heat of the spicy with a horchata water that is very good and really helps to continue enjoying without filling you with air. If you are new to this craving, at the end go for an antacid to balance the PH of the stomach or for a classic Leon barley. Your stomach will thank you.
I'm not giving it 5 stars because I think there is still room for improvement in cleaning (like salt shakers and lemons felt sticky).
