Carmen Ramírez Degollado, “Titita”, como le dicen sus amigos, nació hacia 1940 en un Xalapa lleno de aroma a hierbas, a café, a especias, a maíz y piedra volcánica. En casa fue donde aprendió a cocinar para su familia, envolviéndose en la vasta cocina veracruzana, sólo para después, al recorrer un México próspero y rico, enamorarse por completo de la tradicional cocina mexicana. Si bien nunca pensó dedicarse profesionalmente a la cocina, fue gracias a su esposo Raúl y sus amigos, como decidió llevar su sensibilidad culinaria a un restaurante en 1972, inaugurando El Bajío en Cuitláhuac, un sueño familiar en el que involucró a cada uno de sus cinco hijos, principalmente a Mari Carmen, Luz María y María Teresa, a quienes transmitió su pasión por la cocina de México. Hoy, cuatro décadas después, Carmen “Titita” es una chef aclamada internacionalmente, embajadora del delicioso sazón mexicano, promotora de las costumbres alrededor de los comedores familiares mexicanos y fiel vocera de la cultura culinaria en México, enfocando sus actividades en contribuir a que el sabor auténtico de la cocina mexicana perdure en las generaciones venideras, así tenga que escribir libros, hacer festivales, ofrecer demostraciones culinarias, participar en ponencias o seguir descubriendo delicias en los rincones de México.

Our last dinner took place at this restaurant, and oh boy it was phenomenal The restaurant is located in the heart of the City of Mexico, this the commercial district, what a pristine area. Inside the restaurant, you get that colonial feeling due to its beautiful structure. The service is only comparable with the french style, super polite people will take care of your order, and finally the food we ordered was out of this world. By far the best. Prices are very affordable. Strongly recommended.

Excellent food and service in an absolutely beautiful setting. We stayed until closing and were given a comprehensive tour of the house and all it’s museum-quality artesanías that decorated the many rooms.

The carnitas were great with all the trimmings and at a great price. Service was very attentive and superb. Atmosphere was delightful with beautiful decor and flowers.

I randomly walked into Bajío for some dinner, and they didn't disappoint. Their menu didn't really have any vegan options, but the waitresses were very nice and they whipped me up some yummy beans and veggies. Great location. Great staff. I recommend.

Fantastic service, great breakfast, beautiful location. The only thing is that they should tell you what isn't included and offered so you're not surprised by the bill. Definitely recommending this place as top 3 in the center.

Every time I visit mexico this is a great place for breakfast, portions are good, quality of the food is superb, the staff attention is amazing, but most importantly the taste of the food exceeded my expectations, had the best experience here, thank you to all the staff al el bajio
