XUVA’ culinaria es el vivo testimonio de las diversas prácticas culinarias del pueblo tacuate, heredadas y enriquecidas a través de generaciones desde tiempos prehispánicos.
Los platillos narran un conjunto de saberes que dan cuenta de las técnicas de cocción, conservación y preparación de alimentos, de conocimientos de los vegetales y fauna locales, de los tiempos de recolección y del intercambio cultural con comunidades vecinas.
La gastronomía es el lazo que nos conecta con la grandeza de nuestro pasado y el orgullo de nuestro presente, de la mano del maíz la experiencia culinaria tacuate es contenida por candó, hierba santa, epazote y el chile costeño.

★ ★ ★ ★ ★ Mi acompañante y yo pedimos cada uno, uno de los dos menús de degustación ($550 c/u y no incluye ninguna bebida). Recomendamos especialmente el de la sopa de hojas de chepil. Las empanadas de pollo, el chile de agua y los postres fueron una delicia completa. Las salsas buenísimas todas. La cerveza que pedimos (de Guayaba) nos encantó. Es un lugar caro, si. Pero vale la pena si quieres darte un gusto de vez en cuando y probar cosas distintas.
 My companion and I each ordered one of the two tasting menus ($550 each and does not include any drinks). We especially recommend the one with the chepil leaf soup. The chicken empanadas, the chili de agua and the desserts were a complete delight. All very good sauces. We loved the beer we ordered (Guava). It's an expensive place, yes. But it's worth it if you want to treat yourself from time to time and try different things.

★ ★ ★ ★ ★ This is my favorite Mexican restaurant of all I have been to since I moved to Mexico three years ago. This food, although it uses some French techniques, is loyal to the original flavors. It is a Oaxacan style restaurant that is a kind of a love letter to Chef Juan Aquino's people, the Tacuache, from Santa Maria Zecatepec in Oaxaca.
I have been several times and I always enjoy the experience. They also have an art gallery and a shop with exquisite embroidered huipiles and other clothes as well as other items.
They are the Santa Maria La Ribera neighborhood, about a block from the kiosko. Apart from private transport, it's reasonably near the San Cosme Metro Station.

★ ★ ★ ★ ★ Excellent dinner with our Daughter and her friend last night. Explored different Mezcales that were wonderful, an array of Oaxacan delicacies from delicious Tlayudas, not to miss tostadas with hoja Santa, to my tasty filet mignon in a perfect example of a mole. Our waiter Omar was patient and suggested the right choices. The space is very well designed surrounded by an art gallery and cool bookshop. Will be returning!
